HACCP (Hazard Analysis Critical Control Points) is a concept that implements control measures and preventive steps to protect food from substances that are hazardous to health.

HACCP is a risk analysis and control of critical points - at all stages of the preparation, processing, manufacture, packaging, storage, transportation, distribution, treatment and sale of food.
Every food company must carry out a HACCP analysis according to the Codex Alimentarius and implement a HACCP system in order to implement the legal requirements for food safety in its operations.

History

The HACCP concept was developed in 1959 when the US company The Pillsbury Company was commissioned by the space agency NASA to produce a 100% safe, space-suitable astronaut food.

The company applied the FMEA methodology created by the U.S. military for technical applications in 1949 to the food industry and further developed this preventive concept in cooperation with NASA.

In 1971 it was published in the USA as a HACCP concept.

In 1985, the US National Academy of Sciences recommended applying the concept. It was then tested and developed worldwide. The Codex Alimentarius, published by the Food and Agriculture Organization of the United Nations (FAO), has also recommended the use of the HACCP concept since 1993.

Certification process

Certification according to the Dutch HACCP is scheduled to run for three years. The topics of hygiene management, prevention programs with basic hygiene measures and general process control are checked in your company as part of an annual audit.
